Ingredients

  • 1 tablespoon ground turmeric
  • 1 tablespoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon ground cloves
  • 1 cup dried cranberries
  • 1 ripe avocado
  • 1/2 teaspoon maple syrup
  • 1/2 pound cooked turkey breast ; cubed
  • 1/4 cup chopped celery
  • 1/2 cup chopped walnuts

Preparation

  1. 1

    Step 1

In small bowl, combine first seven ingredients (all the spices). Heat dry skillet over medium-high and pour spice mixture into hot skillet. Toast, stirring, for 20 seconds to release aromas. Remove from heat.

  2. 2

    Step 2

In medium bowl, mash avocado (should be about 1/2 cup). Add cranberries and maple syrup, and stir to combine. Add chicken, celery, walnuts, and 1/2 tablespoon of the spice mix. Stir gently until thoroughly combined. Store the remainder of the spice mix in a small zip-lock bag to use as an AIP substitute for curry powder.

  3. Bon appetit!
