Ingredients

  • 2 medium cucumbers, peeled, seeded
  • 1 pint cherry tomatoes
  • 1/2 teaspoon salt
  • 1/4 chopped green onion (or red onion)
  • 1 cup feta cheese, crumbled
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/8 teaspoon fresh ground black pepper

Preparation

    Chop the cucumbers into 1 inch cubes. Place in a medium size bowl and sprinkle with salt. Let sit 15 minutes to release water.
