Ingredients
- 2 medium cucumbers, peeled, seeded
- 1 pint cherry tomatoes
- 1/2 teaspoon salt
- 1/4 chopped green onion (or red onion)
- 1 cup feta cheese, crumbled
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/8 teaspoon fresh ground black pepper

Chop the cucumbers into 1 inch cubes. Place in a medium size bowl and sprinkle with salt. Let sit 15 minutes to release water. - 2
