- 3 firm-ripe medium (4 1/2 oz. each) avocados, chopped (about 2 cups)
- 1 pt. multi-colored cherry tomatoes, halved (about 2 cups)
- 1 large (2 7/8 oz.) shallot, finely chopped (about 3 Tbsp.)
- 2 Persian cucumbers (3 oz. each), thinly sliced (about 2 cups)
- 1 oz. feta cheese, crumbled (1/4 cup)
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
