Ingredients

  • 2 eggs
  • 40 ml unsweetened almond milk
  • 125g can black beans, rinsed, drained
  • 30g baby spinach
  • 20 ml crumbled Greek feta

Preparation

    Whisk the eggs and almond milk in a small bowl. Season.

    Heat a non-stick frying pan over medium heat and lightly spray with olive oil. Cook the beans and spinach, stirring, for 1-2 minutes or until spinach is wilted. Transfer to a bowl.
