Ingredients

  • 2 ripe banana
  • 1 Tbsp ground flaxseeds
  • 1 cup unsweetened soy milk
  • 1 cup buckwheat flour
  • baking powder
  • ground cinnamon
  • pure vanilla extract
  • ¼ tsp salt
  • ¼ tsp pumpkin spice mix
  • 1 cup fresh mixed berries
  • 3 Tbsp almond butter

Preparation

    Step 1

    Mash the bananas in a large bowl.

    Step 2

    Add all of the remaining ingredients and stir until well combined. If your batter seems too runny, let the mixture sit for 5 minutes to thicken slightly.

    Preheat a non-stick large pan over medium heat, and add some oil. When hot, dollop about 2 Tbsp of batter into the pan, using the back of your spoon to shape the batter into round pancake shapes.

    When lightly golden on the bottom, flip, and let cook on the other side.
