- 3 tbsp milk
- 5 oz spinach
- 3 oz feta
- freshly grated nutmeg
- salt
- pepper
- butter for frying

In a mixing bowl, whisk together eggs and milk. Season to taste with salt and pepper. - 2

In a frying pan, sauté the spinach until wilted. Season to taste with nutmeg, salt, and pepper. Set aside. - 3

Melt butter in frying pan, add eggs. Simmer on medium-low heat for approx. 1 min., then sprinkle spinach and feta on top. - 4
