Ingredients
- 4 bell peppers, diced into ~2 in squares
- 16 oz. plant based or regular beef
- 1 cup eggplant, diced
- 1/2 red onion, diced
- 1 packet organic taco seasoning
- 1/2 c fire roasted tomatoes
- 1 tbsp avocado oil
- Toppings of choice: cilantro, jalapeño, avocado, onion, tomato, etc.!

Place peppers evenly on a parchment paper lined baking sheet. Roast for 5 mins. - 5

While peppers are roasting, add oil, then all veggies and meat to a skillet. - 6

Once well cooked, add in seasoning and fire roasted tomatoes. - 7
