Ingredients

  • 4 bell peppers, diced into ~2 in squares
  • 16 oz. plant based or regular beef
  • 1 cup eggplant, diced
  • 1/2 red onion, diced
  • 1 packet organic taco seasoning
  • 1/2 c fire roasted tomatoes
  • 1 tbsp avocado oil
  • Toppings of choice: cilantro, jalapeño, avocado, onion, tomato, etc.!

    Preheat oven to 375.

    Place peppers evenly on a parchment paper lined baking sheet. Roast for 5 mins.

    While peppers are roasting, add oil, then all veggies and meat to a skillet.
