Ingredients

  • 1/2 cup diced red bell pepper
  • 1 1/2 cups egg whites, from a carton or about 12 fresh large egg whites
  • 4 to 6 grape tomatoes, sliced thinly crosswise
  • 2 cups baby spinach leaves, coarsely chopped
  • 1 1/2 tablespoons unsalted butter
  • Marinara sauce or pizza sauce, optional, for serving
  • Dash freshly ground black pepper
  • 3/4 teaspoon salt
  • 1/2 cup freshly grated Parmesan cheese, divided
  • 3/4 teaspoon Italian seasoning
  • 2 green onions, sliced, white, and light green separated from dark green

    Gather the ingredients. Preheat the oven to 375 F.

    Combine the egg whites with half of the Parmesan cheese and the Italian seasoning, salt, and pepper in a medium bowl. Whisk until blended, but do not overbeat. Set aside.

    Melt the butter in a 10-inch oven-safe nonstick skillet over medium heat. Add the white and light green sliced green onions and bell pepper and sauté until softened, 2 to 3 minutes.

    Pour the egg mixture into the skillet and cook just until the egg whites begin to look set around the edges, 1 to 2 minutes.

    Transfer the frittata to the oven and continue to cook for about 10 to 12 minutes, or until set. To brown the top more, turn the broiler on high and let it cook for about 1 minute longer.
