Keto Shrimp Zoodle Alfredo

Ingredients
- 1 tbsp. extra-virgin olive oil
- 1 lb. shrimp, peeled and deveined
- 3/4 c. heavy cream
- 3/4 c. freshly grated Parmesan
- 1 lb. zoodles
- Kosher salt
- Freshly ground black pepper
Preparation

Step 1
In a large skillet over medium heat, heat oil. Add shrimp and cook until opaque, about 2 minutes. Remove shrimp from skillet and reserve on a plate. - 2
Step 2
Return skillet to medium heat and add heavy cream and Parmesan and bring to a simmer. Let simmer until thickened, 3 to 5 minutes. - 3
Step 3
Add zoodles and shrimp and season with salt and pepper. Toss to combine and cook until zoodles are tender, about 2 minutes more. Bon appetit!
