Ingredients

  • 1 1/2 lbs. ground turkey (uncooked)
  • 28 oz. canned crushed tomatoes
  • 1 cup chicken stock/broth (vegetable broth or water can also be used)
  • 1 red bell pepper (diced (or any color bell pepper))
  • 1 large onion (diced)
  • 3-4 cloves garlic (finely chopped or minced)
  • 1 zucchini (diced)
  • 1 cup frozen corn (or fresh)
  • 15 oz. canned black beans (drained and rinsed)
  • 2 tablespoons chili powder
  • 1 tablespoon cocoa powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1/2 tablespoon garlic powder
  • 1/4 teaspoon cayenne pepper (omit for a mild version)
  • kosher salt (to taste)
  • black pepper (to taste)
  • 1/4 cup chopped fresh cilantro

Preparation

    Step 1

    Combine all ingredients except cilantro in a slow cooker and stir to combine.

    Cook on low for 8 hours or high for 4 hours.

    Stir in cilantro and adjust seasoning as needed.
