Crockpot Turkey and Vegetable Chili

Ingredients
- 1 1/2 lbs. ground turkey (uncooked)
- 28 oz. canned crushed tomatoes
- 1 cup chicken stock/broth (vegetable broth or water can also be used)
- 1 red bell pepper (diced (or any color bell pepper))
- 1 large onion (diced)
- 3-4 cloves garlic (finely chopped or minced)
- 1 zucchini (diced)
- 1 cup frozen corn (or fresh)
- 15 oz. canned black beans (drained and rinsed)
- 2 tablespoons chili powder
- 1 tablespoon cocoa powder
- 1 tablespoon smoked paprika
- 1 tablespoon cumin
- 1/2 tablespoon garlic powder
- 1/4 teaspoon cayenne pepper (omit for a mild version)
- kosher salt (to taste)
- black pepper (to taste)
- 1/4 cup chopped fresh cilantro

Step 1
Combine all ingredients except cilantro in a slow cooker and stir to combine. - 2

Cook on low for 8 hours or high for 4 hours. - 3

Stir in cilantro and adjust seasoning as needed. - 4

Serving suggestion: serve on top of brown rice with fixings such as chopped green onions, extra cilantro, avocado, sour cream/Greek yogurt, hot sauce, etc. for toppings. Bon appetit!
