Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 red, yellow, or green bell pepper, cored, seeded, and sliced into 1/2-inch strips
- 1 medium sweet onion , halved and sliced into 1/2-inch strips
- 10 whole cloves of garlic , peeled
- 2 cups canned crushed tomatoes
- 12 kalamata or Nicoise olives
- 1/2 teaspoon Caribbean seasoning blend or lemon pepper
- 4 (5-ounce) cod fillets
- Kosher salt , to taste
- Black pepper , freshly ground, to taste

Gather the ingredients. - 2

In a saute pan over medium-low heat, heat the oil until hot, then add bell peppers, onions, and whole garlic cloves; cook until the vegetables are tender, about 5 minutes. - 3

Add crushed tomatoes, olives, and seasoning. Continue cooking until garlic cloves are easily pierced with a fork, about 5 minutes. If mixture becomes dry, add 1 tablespoon of water at a time, as needed. - 4

Increase the heat to medium. Add the fish fillets to the pan, spooning the sauce over top. Saute until cod is cooked through and flakes easily with a fork, 5 to 7 minutes . Season to taste with salt and pepper. - 5
