Spiced Pear Overnight Oats

Ingredients

  • 2/3 cup old fashioned oats
  • 2 tablespoons chia seeds
  • 1 cup coconut milk (from a 15oz can)
  • 1 small pear (Blade D, noodles trimmed well)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • almond milk (to thin)

Method

  1. Combine all of the ingredients in a mason jar and shake to combine. Refrigerate overnight.
  2. When you’re ready to enjoy, add almond milk by the tablespoon and stir well until you reach your desired consistency (for me, 2 tablespoons was enough!)
