Why it works

  • Celiac disease: The broth is coconut milk and a gluten-free stock, thickened by nothing but simmering.
  • Milk allergy: Coconut milk makes the sauce creamy, so there is no dairy in the pot.
  • Hashimoto's thyroiditis: Gluten-free throughout, with no soy hiding in the broth.
  • Fish allergy: Seasoned with salt and lime instead of fish sauce, no seafood here.
  • Soy allergy: Coconut milk carries the sauce, with no soy-based creamers or sauces.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
