Why it works

  • Celiac disease: Built on rice noodles — no wheat, and the sauce needs no soy or stock cubes.
  • Milk allergy: Coconut milk gives the sauce its creaminess, no dairy at all.
  • Hashimoto's thyroiditis: No soy or seaweed — savouriness comes from salt, ginger and garlic.
  • Fish allergy: No fish sauce — salt, ginger and lime do the seasoning work instead.
  • Soy allergy: Coconut milk, lime and ginger — nothing soy-based in the pan.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
