Why it works
- Type 2 diabetes: Protein and vegetables only, no sugar and no starch to spike anything.
- Hashimoto's thyroiditis: Gluten-free throughout; the braising liquid is just water and thyme.
- Autoimmune protocol (AIP): Chicken, carrots, celery and broccoli with olive oil and thyme — no seeds, dairy or nightshades.
- Celiac disease: Naturally gluten-free, and the pan sauce needs no flour or stock.
- Milk allergy: Braised in olive oil and water — no dairy of any kind.
- Wheat allergy: No wheat anywhere; the sauce thickens itself from the braise.
- Egg allergy: No eggs in the pot or on the plate.
- Gluten-free: Every ingredient here is gluten-free as it comes.
- Anti-inflammatory: Slow-braised chicken with olive oil, carrots, celery and broccoli.
- Paleo: Chicken, vegetables, herbs and olive oil — nothing else.
- Egg-free: Eggs are nowhere in this dish.
- Dairy-free: The broccoli is tossed in garlic-infused olive oil, not butter.
- No spicy food: Thyme and sweet carrots do the seasoning; nothing hot.
