Why it works

  • PCOS: Sweet potato and spinach under plenty of eggs, with no added sugar on the plate.
  • Gluten-free: Potato, eggs and vegetables only, so there is no flour or crumb to worry about.
  • Anti-inflammatory: Slow-roasted sweet potato, leafy spinach and olive oil, baked rather than fried.
  • Hashimoto's thyroiditis: A naturally gluten-free plate with no soy or seaweed among the eight ingredients.
  • No spicy food: Seasoned with salt, pepper and scallions, nothing hot.
  • Picky eater: Soft cubes of sweet potato and gentle eggs in a sliceable wedge, easy to eat with a fork.
  • Milk allergy: The frittata sets with eggs alone, no milk or cheese stirred in.
