Why it works

  • Celiac disease: Built on gluten-free pasta with a sauce made only from tomatoes, garlic and olive oil.
  • Milk allergy: The glossy sauce comes from pasta water and olive oil, no parmesan needed.
  • Hashimoto's thyroiditis: No soy or seaweed anywhere: garlic, chili, lemon and parsley do the seasoning.
  • Fish allergy: Shrimp is shellfish, not fin fish, and nothing else in the pan comes from the sea.
  • Soy allergy: A pure tomato and garlic sauce, with no soy sauce or soy substitutes.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
