Kids’ plate: Golden Scallop Coins with Rice and Corn
On the plate: Golden seared scallops cut small, fluffy rice and sweet corn, plain before the lemon and garlic go on.
Make it a game: Flip the scallop coins over like treasure coins to find the golden side.
Set it aside at step 5, before the grown-ups’ sauce or spice goes on.
Why it works
- Hashimoto's thyroiditis: No soy or seaweed anywhere: rice, scallops and vegetables seasoned with olive oil, lemon and herbs.
- Gluten-free: Rice, scallops, corn and sprouts — every bit of the flavour comes from garlic, lemon and olive oil.
- Kid (4–12): Golden scallop coins and sweet corn to pick up, seasoned simply before the lemon goes on.
- Toddler (1–3): Soft scallop pieces and sweet corn mashed together, with rice to scoop by the spoonful.
