Why it works

  • Type 2 diabetes: Roasted fennel and radishes bring the carbs way down, with plenty of protein on the plate.
  • Hashimoto's thyroiditis: Gluten-free throughout, and nothing here leans on soy or seaweed for flavour.
  • Celiac disease: Everything is cooked from scratch, so no sauces or stocks hiding any gluten.
  • Milk allergy: The pan sauce is made from the chops' own juices and vinegar — no milk anywhere.
  • Wheat allergy: No flour, breadcrumbs or breading; the chops are seasoned and seared as they are.
  • Egg allergy: A simple rub and pan sauce, with no eggs or egg-based binders.
  • Gluten-free: Every ingredient is plain and whole: pork, vegetables, herbs, oil and vinegar.
  • Anti-inflammatory: Olive oil, herbs, avocado and roasted vegetables, with no processed extras.
  • Egg-free: The chops are rubbed and seared, so there's no egg wash or binder.
  • Dairy-free: Olive oil does all the cooking fat work here; nothing dairy-based touches the pan.
  • No spicy food: Dill, parsley and fennel carry the flavour — gentle from first bite to last.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
