Ingredients
- 1.5 lb extra-large shrimp, peeled and deveined
- 4 zucchini, cut into ribbons with a peeler
- 4 tbsp garlic-infused olive oil
- 3 cloves garlic, minced
- 2 lemon, zest and juice
- ½ cup fresh basil, torn
- 3 scallion greens, sliced
- ¾ tsp salt
Method
- Pat the shrimp dry and salt them.
- Heat 2 tbsp garlic-infused olive oil in a wide skillet over medium-high until it shimmers.
- Add the shrimp in one layer and sear until pink and just cooked through to 145°F/63°C at the thickest part, about 2 minutes per side. Move them to a plate.
- Lower the heat to medium, add the remaining oil and the minced garlic, and cook until fragrant, about 1 minute.
- Add the zucchini ribbons, toss to coat, and cook until just tender, about 3 minutes.3 min timer
- Take the pan off the heat. Toss in the lemon zest, lemon juice, basil and scallion greens.
- Return the shrimp and any juices to the pan, toss once, and taste for salt.
- Twirl the ribbons onto plates and pile the shrimp on top.
Why it works
- Hashimoto's thyroiditis: Naturally gluten-free and soy-free; the whole dish seasons itself with lemon and fresh basil.
- Pregnant: Nothing raw, unpasteurised or alcoholic in the pan — shrimp, zucchini and lemon, cooked fresh.
- Toddler (1–3): Soft ribbons and bite-size shrimp, mild and easy to pick up.
- Kid (4–12): Mild garlic-lemon shrimp with ribbons to twirl around a fork.
Hashimoto's check: watch for soy and seaweed (they can affect thyroid medication), and gluten if you avoid it. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
