Ingredients
- 500 g lean ground beef, ground
- 4 cup green cabbage, thinly sliced
- 250 g asparagus, woody ends snapped off, cut into bite-sized pieces
- 2 tbsp olive oil
- 3 clove garlic, minced
- 1 tbsp fresh ginger, finely grated
- 1.5 tbsp apple cider vinegar
- ¾ tsp fine sea salt
- 3 tbsp water
Method
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and half of the sea salt, breaking it into small bits with a wooden spoon, until thoroughly browned and cooked to an internal temperature of at least 165°F (74°C), about 6 minutes.6 min timer
- Transfer the cooked ground beef to a plate, leaving any rendered juices in the pan.
- Add the remaining 1 tablespoon of olive oil to the pan. Add the minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant.1 min timer
- Add the sliced cabbage, cut asparagus, water, and the remaining sea salt. Toss well, cover with a lid, and let steam until the cabbage is tender and asparagus is crisp-tender, about 5 minutes.5 min timer
- Remove the lid, return the ground beef to the skillet, and stir in the apple cider vinegar. Cook, stirring continuously, for 2 minutes to blend flavours and let excess moisture evaporate.2 min timer
Why it works
- Autoimmune protocol (AIP): Built on ground beef, cabbage, and asparagus seasoned simply with ginger, garlic, apple cider vinegar, and olive oil without nightshades, seed spices, or grains.
- Hashimoto's thyroiditis: Free from gluten and soy, drawing savory richness from garlic, ginger, and browned beef.
- Pregnant: Fresh ground beef and vegetables with no alcohol, unpasteurised dairy, or raw items.
- Toddler (1–3): Ground meat and tender steamed cabbage offer manageable textures without whole nuts or hard round shapes.
- Kid (4–12): Familiar ground beef and mild tender vegetables without spicy heat.
AIP check: watch for nightshade spices (paprika, chili, cayenne), seed spices (cumin, coriander seed), seed oils and hidden sugar. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
