Why it works

  • Type 2 diabetes: Protein and fibre lead the plate, with sweet roasted fennel as the only carb.
  • Hashimoto's thyroiditis: Chicken, fennel and kale with olive oil; no soy or seaweed anywhere.
  • Celiac disease: Nothing here but chicken, vegetables, herbs and oil; no grain products at all.
  • Milk allergy: Crispy chicken and greens cooked in olive oil, with no milk in any form.
  • Wheat allergy: The chicken sears skin-side down, no coating or flour involved.
  • Egg allergy: A one-pan chicken dinner built on olive oil and herbs, no eggs.
  • Gluten-free: Just chicken, fennel, kale and oil, with nothing processed in sight.
  • Anti-inflammatory: Olive oil, leafy greens and herbs with a pan-seared protein, no frying.
  • Egg-free: The skin crisps on its own in the pan, no egg wash or binder.
  • Dairy-free: Richness comes from olive oil and crispy skin, not butter or cream.
  • No spicy food: Seasoned with salt and oregano only, mild from edge to edge.
