Why it works

  • Type 2 diabetes: Fish and zucchini with no added sugar—protein first, vegetables alongside.
  • Hashimoto's thyroiditis: Grain-free and soy-free: the sauce is herbs, lemon and olive oil.
  • Celiac disease: Nothing grain-based touches the pan: fish, herbs, olive oil and zucchini.
  • IBS: Garlic-infused olive oil gives the garlic taste without the garlic itself.
  • Milk allergy: The sauce gets its body from herbs and olive oil—no dairy anywhere.
  • Wheat allergy: No wheat, breading or thickeners: just fish, vegetables and a herb sauce.
  • Egg allergy: The green sauce is oil and herbs, not an egg-based dressing.
  • Gluten-free: Every element is naturally gluten-free with nothing hidden in a sauce.
  • Anti-inflammatory: Olive oil, leafy herbs and green vegetables, seared rather than fried.
  • Egg-free: The sauce emulsifies from whisked oil, lemon and herbs alone.
  • Dairy-free: Richness comes from good olive oil and browned zucchini, not butter or cream.
  • No spicy food: Nothing hotter than black pepper in one person's serving—everything else is mild.
