Why it works

  • Celiac disease: Rice instead of bread in the keftas, and the salad dresses in lemon and olive oil.
  • Milk allergy: Keftas bound with nothing but their own fat; olive oil and lemon dress the salad.
  • Hashimoto's thyroiditis: Gluten-free rice and no soy; the spice is cumin, cinnamon and fresh parsley.
  • Fish allergy: Beef seasoned with spices and lemon; no fish sauce, anchovy or stock.
  • Soy allergy: Fresh lemon, garlic and parsley do the seasoning work instead of soy sauce.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
