Kids’ plate: Chicken Trees and Lemon Rice
On the plate: Plain golden chicken pieces, lemony rice and soft zucchini, scallions left off.
Make it a game: Plant the chicken trees on a rice mountain and make the zucchini into a garden around it.
Set it aside at step 3, before the grown-ups’ sauce or spice goes on.
Why it works
- Hashimoto's thyroiditis: Lemon, oregano and garlic do the seasoning; nothing fermented or soy-based in the pan.
- Gluten-free: Rice and stock carry the dish, and the stock is gluten-free.
- Anti-inflammatory: Brown rice, olive oil and a big pile of zucchini under lemony chicken.
- Kid (4–12): Mild lemon rice and tender chicken strips, nothing spicy to pick around.
- Toddler (1–3): Soft zucchini and small chicken pieces that little hands can pick up.
