Why it works

  • Celiac disease: A naturally gluten-free plate: sweet potato, beans and spinach, no flour in sight.
  • Wheat allergy: Sweet potato stands in for the tortilla, so there is no wheat to watch for.
  • Gluten-free: Whole sweet potato, beans and greens, all gluten-free without swaps or substitutes.
  • Acid reflux (GERD): Baked rather than fried, with mild cumin and no tomato or citrus in the filling.
