Why it works

  • Tree nut allergy: No nuts anywhere: the crunchy crust is gluten-free breadcrumbs with parsley and lemon zest.
  • Milk allergy: No milk, butter or cheese: olive oil keeps the crumb crisp and the veg golden.
  • Wheat allergy: The crumb is gluten-free breadcrumbs, so nothing on the plate carries wheat.
  • Dairy-free: Olive oil and lemon do the finishing here; no cream, butter or cheese in sight.
