Why it works

  • Celiac disease: Polenta instead of pasta or bread, and every flavour built from lemon, garlic and olives.
  • Milk allergy: Creamy polenta made with water and olive oil, no butter, milk or cheese.
  • Hashimoto's thyroiditis: Gluten-free polenta and no soy sauce: the braising liquid is lemon, garlic and olive oil.
  • Fish allergy: Chicken thighs braised with lemon and olives; no fish or fish sauce anywhere.
  • Soy allergy: Seasoning is garlic, oregano, lemon and olives, nothing fermented from soy.

Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
