Why it works
- Hashimoto's thyroiditis: Naturally gluten-free throughout, with no soy: the oats are certified gluten-free and the sauce is just vegetables and herbs.
- Type 2 diabetes: Lean turkey and zucchini noodles carry the meal, with no added sugar anywhere in the sauce.
- Wheat allergy: No wheat in any form: the meatballs are bound with certified gluten-free oats instead of breadcrumbs.
- Gluten-free: Baked meatballs and a vegetable sauce, written entirely gluten-free from the oats to the vinegar.
- Kid (4–12): Hand-held meatballs with mild herby sauce over soft noodles, nothing spicy and everything to twirl.
Celiac check: watch for hidden gluten in soy sauce, stock, malt vinegar and seasoning blends, and oats that aren’t certified. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
