Ingredients
- 500 g lean ground beef, 90% lean
- 2 tbsp olive oil
- 400 g parsnip, peeled and diced into 1 cm pieces
- 300 g cauliflower, cut into small florets
- 2 cloves garlic, finely minced
- 1 tbsp fresh thyme leaves, finely chopped
- 1 tsp salt
- ½ cup water
- 1 tbsp lemon juice, freshly squeezed
Method
- Warm 1 tablespoon of olive oil in a wide skillet over medium-high heat. Add the ground beef and half the salt, breaking it into small pieces with a wooden spoon until browned and fully cooked to 160°F/71°C throughout.8 min timer
- Transfer the browned beef to a plate and set aside, leaving any rendered juices in the pan.
- Add the remaining 1 tablespoon of olive oil to the same skillet over medium heat. Stir in the diced parsnip, cauliflower florets, minced garlic, fresh thyme, remaining salt, and the water. Cover tightly with a lid and let steam until the parsnips and cauliflower are fork-tender.10 min timer
- Remove the lid, return the cooked beef to the skillet, and drizzle with the fresh lemon juice. Stir everything together over medium heat until piping hot and fragrant.3 min timer
Why it works
- Autoimmune protocol (AIP): Made with olive oil, herbs, and lemon juice, without grains, nightshades, seeds, or coconut.
- Hashimoto's thyroiditis: Naturally wheat-free and gluten-free, without any soy products.
- Pregnant: Prepared without alcohol or unpasteurised foods.
- Toddler (1–3): Tender root vegetables steamed until soft enough to mash easily with a fork.
- Kid (4–12): A mild, savory skillet with gentle thyme seasoning and naturally sweet parsnip.
AIP check: watch for nightshade spices (paprika, chili, cayenne), seed spices (cumin, coriander seed), seed oils and hidden sugar. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
