- 4 skinless salmon fillets, about 150 g each, pin bones removed
- 2 medium zucchini, sliced into half-moons
- 3 medium carrots, peeled and sliced into thin coins
- 2 tbsp olive oil
- 2 cloves garlic, finely grated
- 2 tbsp fresh dill, finely chopped
- 1 tsp lemon zest, finely grated
- 1 tbsp lemon juice
- ¾ tsp fine sea salt
Method
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

- Toss the sliced carrots and zucchini on the baking sheet with 1 tablespoon of olive oil and a pinch of the sea salt. Spread them into an even layer.

- Roast the vegetables until they begin to soften, about 10 minutes.10 min timer

- In a small bowl, stir together the remaining 1 tablespoon of olive oil, grated garlic, chopped fresh dill, lemon zest, lemon juice, and remaining sea salt.

- Remove the baking sheet from the oven, push the vegetables to the sides, and place the salmon fillets in the centre. Spoon the dill-garlic mixture over the top of each fillet.

- Return the sheet to the oven and roast until the salmon registers 145°F (63°C) on an instant-read thermometer and the carrots are tender, about 12 minutes.12 min timer

Why it works
- Autoimmune protocol (AIP): Made with fresh herbs, garlic, and olive oil, without nightshades, seed spices, grains, or coconut.
- Hashimoto's thyroiditis: Naturally gluten-free and prepared entirely without soy.
- Pregnant: Uses fresh low-mercury salmon, with no unpasteurised dairy or alcohol in the pan.
- Toddler (1–3): Mild flavours, tender roasted carrots, and easily flaked fish.
- Kid (4–12): Gentle herbed fish and naturally sweet roasted carrots with no mushrooms or spicy heat.
AIP check: watch for nightshade spices (paprika, chili, cayenne), seed spices (cumin, coriander seed), seed oils and hidden sugar. Gluten gives food ideas, not medical advice: always check labels for allergens and cross-contact.
